Jessica Sepel's delicious Healthy BBQ Chicken is the perfect dish for al fresco dining.
PREP TIME: 50 minutes, including cooking + overnight marinating (optional)
6 chicken breasts
250 ml chicken stock
mixed salad and/or steamed asparagus and lemon wedges, to serve
finely grated zest of 1 orange
1/2 teaspoon chilli flakes
2 teaspoons smoked paprika
2 tablespoons organic dijon mustard
4 tablespoons raw honey or maple syrup
125 ml puréed tomatoes
2 teaspoons olive oil
Celtic sea salt and ground pepper
1 garlic clove, crushed
1 teaspoon grated ginger (optional)
Gently poach the chicken pieces in the stock for 15–20 minutes or until just cooked through.
To make the marinade, mix together all the ingredients in a non-metallic bowl or dish. Remove the chicken pieces from the poaching liquid while still warm and add to the marinade. Turn to coat well.
The chicken may be cooked straight away or you can leave it in the fridge overnight to allow the flavours
